OVERVIEW OF POSITION
The Menu Developer contributes to the success of Impact Kitchen's brand by executing menu development initiatives that support business strategy, sales and promotions. The successful Menu Developer combines their culinary and nutritional knowledge with strong organizational skills to create clear standard operating procedures (SOPs) that maintain consistent standards for the Back of House (BOH) and Commissary Kitchen departments. Through collaboration and teamwork, this role works alongside multiple internal stakeholders to successfully roll out new menu products across multiple restaurants.
Reports to: Director of Culinary + Innovation (DoCI)
Responsibilities:
Product Development

  • Research nutritional trends and seasonal ingredients to propose, develop & test seasonal menu concepts aligned to the menu development calendar
  • Work with key stakeholders to develop the formal process and strategies for bringing proposed menu concepts to final tasting, including:
    • Ingredient list with costing by ingredient (integrated into Inventory management system)
    • Detailed SOP and training materials incorporating photos
    • The production process for new menu items: where the product is made, how it is supplied to the location, etc., in collaboration with the DoCI, PSCM
    • Owns the Ingredient + Nutrition Summary (in collaboration with DoCI), including:
      • Dietary indicators, Product descriptions, Ingredient lists, Allergy flags, Shelf life, SOPs, Associated photos, Video tutorials
  • Support Operations team in bringing new menu items to market & evaluating their success
    • Once rolled out, audit items for SOP accuracy, consistency & taste as a part of the post-launch process
    • Analyze sales post-launch and measure success, driving future menu updates

Training Development
  • Work with the Operations department to develop training programs for BOH and Commissary Kitchen employees.
  • Develop systems to monitor and ensure employees are performing their responsibilities according to the training.
  • Design and implement effective methods to educate, enhance performance and recognize development opportunities for the BOH team.

Additional Duties
  • Create and update supporting documentation for use at Impact Kitchen, including (but not limited to):
    • SOPs
    • Subrecipes
    • Video Training
    • Allergen guide
    • NFTs and other regulatory documentation

Meetings and Touchpoints
  • Attend weekly meetings with DoCI, Menu Development Team
  • Contribute to the ongoing bi-weekly Food Philosophy discussions
