Job description

Saltbox Brewery is located in beautiful Mahone Bay Nova Scotia a thriving tourist town within a 45 minute drive of Halifax. Celebrating five years of operation and continued growth, we find ourselves in need of a Assistant Brewer and Packaging Manager.

Saltbox operates a 10BBL brewhouse, a barrel aging program and a SABCO system for experimental brews. Our products are featured throughout NS, in the NSLC, several private beer stores and restaurants and pubs.

Position - Assistant tothe Brewer and Packaging Manager

Job Summary

This role reports directly to the Head Brewer and assists in all aspects of producing high quality beer and cider. This includes seamless repetition of core products as well as gaining insight into brewing methods, the history of beer styles, recipe development, ingredients, and industry trends. Brewing good beer and cider requires ongoing learning of its craft and science, with utmost attention to detail. You also perform the day-to-day functions of the Packaging department including, but not limited to, the operation of a variety of packaging equipment as well as maintaining clean and orderly packaging areas.

Clear communication with the Head Brewer to establish clear directive as well as personal time management are important. Focus on the task at hand, intensive learning through hands on experience, and self-directed research is also essential to mastery of the craft. Understanding the importance of sanitization as well as maintaining a clean and organized working environment is the foundation of good brewing practice. You are an ambassador for our products and the Saltbox brand at the Brewery and in the community.

Essential Duties and Responsibilities

(Under the direction of the Head Brewer, and including but not limited to the following.)

  • Ensuring safety in the Brewery in all aspects of the brewing and operational processes.
  • Brewing beer and cider (milling, mashing, lautering, boil, vorlauf, cooling and transfers etc)
  • Tracking and managing fermentation, cellaring, filtering, conditioning and carbonation
  • Understanding recipe development (including mineral, Ph and temperature adjustments)
  • Pilot batch brewing
  • Understanding Ingredient Inventory tracking and management.
  • Gaining understanding of ingredients and production methods in recipes.
  • Helping to keeping Ekos brewery management software up to date.
  • Learning Yeast management (propagation, cell counting, reuse for character and optimization).
  • Understanding the importance and practice of quality control and testing.
  • Quality control and testing, including participation in QC panel.
  • Clean in place (CIP) procedures and understanding the properties of chemicals involved.
  • Cleaning Kegs
  • Assist in completing the daily production schedule.
  • Assist in the cleaning of bottling and canning lines
  • Perform required adjustments and routine maintenance to packaging equipment, troubleshooting minor issues as necessary.
  • Operate and perform pre-run, run, post-run, weekly duties and housekeeping on a variety of packaging equipment including, but not limited to: Bottle and Can Fillers, manual case palletizing and forklift.
  • Conduct other routine tasks to keep the bottling, canning, and keg lines sanitized and in proper working order including, but not limited to: Pre-Run and Post-Run Filler Sanitation; Prepare, change over, and sanitize machines to be ready for the next shift; Repair beverage pallets; Sweep and clean area around equipment; Check for quality and accuracy of produced goods; Follow SOP (Standard Operating Procedures) for each piece of equipment.
  • Assist other packaging staff as needed to give breaks and fill in at other stations.
  • Ensure packaging machinery are in good working order, charged (as applicable), cleaned, and ready for the next day’s operation.
  • Maintain neat and orderly packaging areas, including the bottling line, canning line (experience with ACS v5) and all other surrounding work areas.
  • Maintaining a clean and tidy work environment for continual public display.
  • Learning about Microbiological control and problem solving brewing issues
  • Training of ancillary production staff
  • Developing and maintaining standard operating procedures (SOPs)
  • Detailed record keeping

Ancillary Responsibilities

  • Snow removal, salting/sanding parking lot in winter months
  • Managing garbage and recycling on appropriate days
  • Operating Forklift (sending/receiving deliveries, moving packaged goods, etc.)
  • Cleaning floors, windows, equipment, work surfaces in production area
  • Management of production and grounds areas as agreed with Operations Manager.

Organizational Relationships

Reports directly to Head Brewer to keep them informed of all brewing related issues.

Liaises with Operations Manager to discuss items related to production issues, strategic solutions and progress reporting as well as ancillary responsibilities not directly related to production.

Reports to Founders on beer and cider production concerns as requested.

Like the rest of the production team the Assistant tothe Brewer and Packaging Manager must maintain a strong relationship with our Customers and Craft Brew Community; sharing knowledge, ideas and representing Saltbox at its best.
