The role of the Lead Bartender is to oversee the efficient running of the restaurant bar including ordering and inventory, ensuring an amazing elevated service experience, quality beverages and training.  A skilled and knowledgeable bartender with years of experience, this individual shares their knowledge with others and provides leadership to the Bar team. The Lead Bartender is present in the restaurant  for key shifts to ensure quality control, guest satisfaction, team member coaching, and proper technique. The Lead Bartender thrives in a fast-paced environment and knows how to build and maintain great guest relationships.  Someone who truly loves cocktails, wine, beer, and other beverages, the individual in this role is always interested in learning more and gathers information from various sources on new and upcoming trends.

Duties & Responsibilities

  • Develop the cocktail list using fresh, seasonal ingredients to create interesting and delicious beverages.
  • Assist in the selections and the overall organization of the wine list.
  • Responsible for ordering and inventory in an accurate and timely fashion.
  • Organize and hold trainings for bartenders on new cocktails and wine.
  • Collaborate with other restaurant leaders to ensure excellence in products and service for guests
  • Prepare the bar for service by ensuring bar inventory is stocked and replenished throughout service, making note of any supplies that are unavailable and communicating that to the service team.
  • Ensure bar equipment is in good working, communicating necessary repairs.
  • In a consistent manner, prepare alcoholic and non-alcoholic beverages according to specified recipes and using the correct glassware and garnishes.
  • Practise Smart Serve principles at all times
  • Serve guests’ orders by picking up and delivering choices from the kitchen; provide cutlery and accompaniments as required.
  • Interact with guests in the bar area, assess their needs and preferences in order to make appropriate recommendations.
  • Obtain revenues by totalling charges; issuing bill; accepting payment; returning change or credit card and signature slip to patrons; submitting end of shift reporting with all revenues and receipts.
  • Demonstrate a sense of urgency while remaining poised during peak periods while seeking out additional tasks during slower periods.
  • Maintain cleanliness of all bar areas including fridges, counters, ice wells, etc.
  • Wash and polish glassware as necessary.
  • Seek relevant information on events and reservations in order to easily and accurately respond to guest inquiries and direct them accordingly.
  • Make consistent efforts to identify repeat guests and customize their experience based on their preferences.
  • Adhere to established guidelines for opening and closing procedures.
  • Willingly accept additional tasks as required for the effective functioning of the work unit.
  • Demonstrate respect and courtesy for all individuals encountered on the job - management, fellow team members, and guests.
  • Demonstrate a commitment to further develop skills and knowledge.
  • Communicate and be an example of Pearle’s core values by demonstrating genuine and thoughtful hospitality in the day-to-day execution of duties.

Qualifications & Experience

  • 2-4 years in a Bartender role
  • Smart Serve Certification
  • Excellent wine, beer and spirit knowledge (relevant certifications definitely an asset)
