You will be a member of a small collaborative team looking to make its mark on a maturing Nova Scotia beer landscape.
POSITION SUMMARY
The Head Brewer will be tasked with leading the brewing and cellaring operations. The successful candidate will be taking over from a temporary Head Brewer and on the job training will be provided as needed.
RESPONSIBILITIES:
The Head Brewer is responsible for everything required to make top quality beer:
- Procurement and management ingredients - malt, hops, yeast, adjuncts.
- Recipe management and new recipe design
- Brewing water quality, water additions and boiler oversight.
- Brewing, brewing efficiency, healthy wort.
- Cellaring - beer transfer, healthy fermentation, dry hopping, cropping, clarification, carbonation, cleaning equipment.
- Assist with packaging and labeling of finished products
- Management of brewing and cellaring SOPs.
- Forecasting production schedules, purchasing needs and expenses.
- Monthly reporting to meet regulatory requirements.
- Regular preventive maintenance of equipment
- Maintaining proper brewery records. Purchasing, inventory, brewing & cellaring inputs into BMS (Brewery Management System).
- Ensuring safety compliance of all tasks.
- Onboarding and training of new brewing /cellaring staff.
- Conduct sensory evaluations of beer samples to ensure flavor profiles meet specifications
QUALIFICATIONS AND EXPERIENCE
- Experience with brewing systems and processes or beverage production.
- Demonstrated leadership in safety systems.
- Understanding of food processing techniques and quality control procedures
- Supervisory/managerial experience both inside and out of the beer industry.
- Ability to collaborate with team members to develop new beer recipes and improve existing ones
- Knowledge of food safety regulations and best practices.
- Basic math skills for measuring ingredients and calculating recipe proportions.
- Familiarity with forklift operation and safety protocols.
- Mechanical knowledge for troubleshooting equipment issues.
- Self starter with flexibility to meet the needs of the business on a daily basis.
