T&T Supermarket Inc. was founded in 1993 with two stores in BC. Since then, it has expanded rapidly and is now Canada’s largest Asian supermarket chain with 33 stores across the country: 14 in BC, 7 in Alberta, 11 in Ontario, and 1 in Quebec. The Company’s continuous expansion is going to bring more new stores in the next couple of years.

The Role

Reporting to the Prepared Foods Kitchen Deli Manager—Regional, Management Trainee is primarily responsible for performing R&D in Asian Kitchen Deli products for achieving the maximum level of productivity, efficiency and profitability on matters related to production. The position manages a team of Technical Specialists in ensuring the Kitchen Deli production is performed in accordance to corporate policies and statutory procedures.

Major Responsibilities

Research & Development and Market Awareness 

  • Stay current with techniques, preparations, ingredients and new recipes related to Asian Style Kitchen Deli products and methods to successfully enhance product quality
  • Constantly review our existing Asian Style Kitchen Deli product lines and develop new products according to what is popular in the Asian Kitchen Deli market to enhance competitiveness
  • Perform the appropriate research and development procedures and process standardization according to company’s strategic and merchandizing directions

Productivity and Profitability

  • Improve production efficiency by testing the performance of existing equipment and evaluating the cost and benefits of new equipment
  • Create and plan quality Kitchen Deli items while keeping material and labour costs within budgetary constraints and maximizing profitability
  • Ensure food waste and spoilage are kept to a minimum
  • Analyze current plans to ensure the maximization of operating efficiencies
  • Participate in the selection of new equipment to improve streamline and work processes

Kitchen Deli and Staff Management

  • Manage and run a food preparation and production process in a Kitchen Deli environment in accordance with all relevant policies, procedures and government regulations
  • Maintain workplace cleanliness and ensure all equipment are properly cleansed
  • Create Asian Kitchen Deli items from scratch featuring fresh, seasonally appropriate ingredients; and ensuring recipes created are being executed in accordance with specified requests and quantities
  • Provide ongoing coaching, education and professional development including workshops, seminars, classes, and meetings with Kitchen Deli staff
  • Handle employee related matters such as hiring, staff turnover, give recognition and take disciplinary actions as required

Standard Operating Procedures (S.O.P.) & Process Improvement

  • Inspect the Central Kitchen to ensure that all standards and procedures related to security, sanitation, WCB, Health Department, equipment, etc. are being followed
  • Document new or improved work processes timely
  • Assist in developing, updating and documenting the new or improved production processes in terms of Standard Operating Procedures (SOP’s) timely or when a change in work processes and equipment takes place
  • Manage and execute food safety standards and due diligence are delivered in the fresh bread and frozen dough product lines, ensure compliance in all regulatory requirements such as HACCP.

Knowledge, Skills and Ability Requirements

  • A seasoned expert in Asian-style Kitchen Deli products (including Hot Food and Sushi)
  • Minimum of 5 years in the Kitchen Deli (Asian-style) industry; experience as a Kitchen Deli Chef in a high-volume kitchen/manufacturing facility or chain store kitchen operation is an asset
  • Have well versed knowledge in all kinds of ingredients and equipment, production methods of different Kitchen Deli products and work technologies
  • Must be able to identify and keep abreast of the Asian Kitchen Deli market trends, be innovative and be able to turn ideas into business opportunities
  • Must be able to conduct hands-on demonstrations and instructions on techniques, recipes and methods for various kinds of Kitchen Deli products
  • Possesses strong analytical skills, excellent interpersonal and communication skills, ability to make constructive recommendations
  • Able to demonstrate good management and mentoring skills and the confidence to lead by example
  • Ability to work independently and as part of a team in a fast paced, food production environment
  • Possess intermediate level computer skills and is comfortable in using Microsoft Excel and Word
