Production Cook
Reports to- Head Chef or General Manager
A Production Cook maintains and exceeds guest satisfaction producing and preparing all food for delivery to 204 Meal Prep, Prairie Box, Prairie Hospitality Group working with the major airlines and other vendors. The role will control and prepare all product according to specifications, beginning with all ‘Cold-Prep’ and progressing into oven operations. Production Cooks act as the smooth transition from ingredients to the line to the guest. Duties and responsibilities are to be carried out while adhering to all company policies and procedures.
Duties and Responsibilities
Ensure that all products have been prepped, prepared and portioned in 100% accordance to recipes
Maintain an up-to-date working knowledge of recipes to ensure production efficiency and quality
Ensure that production expediency is maintained
Execution of all cleaning checklists to ensure a safe and sanitary facility and workstation
Maintain the kitchen by sanitizing areas before and after use
Ensure all knives and equipment are clean and in good working condition, immediately reporting any issues
Safe operation and cleaning of food processor and slicer
Measure and prepare ingredients according to recipe manuals
Ensure all product is stored and dated properly to minimize waste and maximize quality
Responsible for clean as you go as it pertains to dishwashing and work areas
Adhere to Manitoba Food Safe requirements
Ensure proper cleanliness and organization of walk-in fridges, freezers and all other storage areas
Prep according to lists received from manager/lead
Exhibit personal uniform and personal hygiene per company standards
Other duties as assigned
Requirements
Outstanding organization, coordination, and multi-tasking abilities
Excellent communication skills, verbal and written
Understanding of basic kitchen terminology and recipe deciphering
Understand the use of basic kitchen tools
