JOB TITLE:Closing Kitchen Supervisor
LOCATION: City Centre Grille/Langford Lanes located at 1097 Langford Parkway, Victoria BC.
DEPARTMENT: Food & Beverage Service
REPORTS TO: Kitchen Manager
HOURS: Full-time (35-40 hours/week). Evening and weekend hours are required.
GENERAL JOB DESCRIPTION AND PURPOSE
Reporting to the Kitchen Manager, the Closing Kitchen Supervisor is the second in command of the Kitchen and first in command in the absence of the Kitchen Manager. The Closing Kitchen Supervisor is responsible for the preparation of high-quality food in a timely, efficient, sanitary, and consistent manner. The Closing Kitchen Supervisor must be prepared to work in a fast-paced, high-pressure work environment, while maintaining the organizational ability to identify and act on job duties quickly and effectively. The Closing Kitchen Supervisor is responsible for supervising the activities of staff who prepare, portion and serve food. The Closing Kitchen Supervisor is also responsible for ensuring that all procedures are completed per the daily cleaning checklists, temperature and waste logs, and that the kitchen is clean and closed properly.
TYPICAL DUTIES AND RESPONSIBILITIES
- Ensure kitchen operations run smoothly and efficiently, especially during peak times
- Responsible in ensuring all staff follow the closing procedures and expectations
- Prepare all menu items as directed in a sanitary and timely manner
- Follow recipes, portion controls and presentation specifications as set by the restaurant
- Monitor food quality, and ensure proper standards of food preparation, rotation and storage
- Be supportive of team members, and maintain a high level of professionalism and quality service
- Work conscientiously in assisting to control food quality, food cost, labour, and food waste
- Supervise and help train Back of House staff. Coaching staff on performance, as well as communicating any performance concerns or policy violations to management
- Leading by example, adhere at all times to City Centre Park policies and procedures
- Work with the Kitchen Manager and scheduled staff to complete and document daily, weekly, and monthly tasks are completed
- Understand online ordering systems, kitchen equipment, and safe practices
- Clean and maintain kitchen in practicing excellent safety, sanitation and organizational skills
- Ensure quality and safety of the Kitchen by performing standard and any additional sanitary measures including sweeping of the floors, cleaning of surfaces, as well as proper covering and storage of food items
- Enforce responsible food service management; be knowledgeable in current Food Safe Handling
- Provide excellent service to guests, other employees and the general public.
- Build and maintain a positive and respectful work environment for all kitchen staff.
- Communicate effectively with the Back of House and Front of House staff.
- Ensure that kitchen staff follow recipes and food orders to accurately prepare all food orders accurately
- Support on the line where needed, and as needed.
REQUIREMENTS
- Minimum of 4 years’ culinary experience
- Food Safe Certificate (Level 1 minimum)
- Criminal Record Check
- Inventory or ordering experience is required
- Experience working with inventory control systems is an asset
- Ability to problem solve and have effective time management skills
- Ability to lift up to 50 lbs.

WORKING CONDITIONS

The Employee will be subject to working in other facilities and outdoors as the position requires and may have to manage a number of people and projects at one time. The employee may be interrupted frequently to meet the needs and requests of clients. The employee may find the environments to be busy, noisy and will need excellent organizational, time and stress management skills to complete the required tasks. This job requires shift work, evenings, weekends and holidays fluctuating with the needs of the facility.
