Job Overview

The Sushi Chef is responsible for the preparation and execution of various sushi rolls, nigiri, oshizushi and sashimi using a variety of techniques, specialized equipment and advanced knife cutting skills. They work with the Head Chef and General Manager in managing back-of-house operations and ensuring the guest experience from beginning to end is exceptional and memorable.

Job responsibilities

Exhibits culinary talents by performing day-to-day tasks and producing menu items.

Utilize various kitchen skills and cooking methods to meet brand standards.

Clean and prepare ingredients such as whole fish, shellfish, and other seafood for both the sushi bar and kitchen.

Order fresh seafood daily for food menu items in collaboration with the Sous Chef/Head Chef.

Communicate with multiple vendors to find seasonal fish for Japanese-inspired special food menu items.

Prepare sushi rice by following the standard recipe given.

Prepare crafted rolls, sashimi, oshizushi and nigiri sushi with decorative plate presentations.

Ensure freshness of food and ingredients by checking for quality and rotating stock.

Complete opening and closing duties efficiently and safely, using the correct procedures. Complete all assigned daily, weekly, and monthly cleaning duties.

Comply and action on all health, food safety and hygiene standards and policies.

Trains new employees to the proper company standards.

Other duties as assigned in the scope of this role.

Qualifications

Minimum 2 years of culinary experience as a Sushi Chef.

Experience in a high-volume restaurant setting.

Japanese culinary experience is an asset.

Post-Secondary Education or equivalent proven and related work experience.

Knowledge of current restaurant industry and food trends.

Food Safety and Responsible Alcohol Service certifications are required.

Strong communication skills in English; Japanese or French are considered an asset.

Strong leadership skills with an entrepreneurial spirit.

Driver of sales, profitability, and operational efficiency.

Proven history of hiring, coaching, and training.

Proven history of successfully motivating and managing people.

Positive attitude and a consistent display of professionalism.

Effective conflict management skills.

High level of attention to detail.

PHYSICAL DEMANDS

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. This position requires standing for up to 8 hours per shift, walking, bending, kneeling, stooping, and climbing all day. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. This position also requires lifting up to 25lbs from floor to waist, waist to shoulder and shoulder to above head. This position also required twisting, turning, and reaching.
