Duties and Responsibilities
- Reports: daily, weekly and monthly on labour %, sales, average cheques and dining trends
- Payroll: process service charges, gratuities and tip outs for all F&B Staff
- Work with Chef to build order guide with suppliers
- Work with Chef to build out PAR levels for BOH and FOH
- Assist with FOH food orders
- Organize, label and create FIFO system within inventory storage areas (Dry, Fridge and Freezer)
- Build recipe database, update binders for BOH and FOH for service
- Assist with menu costing and gain approval from Chef/ Director F&B for menu price
- Format and print F&B Menus
- Update inventory sheets prior to inventory (update prices / create shelf to paper inventory sheets)
- Be present for inventory counting & reconciliation
- Code invoices accurately and ensure consistency in cost allocation
- New hire onboarding, schedule orientation
- Ensure all F&B have required training – WHMIS, Food Safe, Pro-serve & filed onsite for Food / AGLC inspections
- Attend operational meetings as required for F&B
- Provide operational support when needed to the F&B Team
Job Requirements
- Diploma within Food and Beverage Hospitality is an asset
- Previous experience in Food and Beverage operations required
- Understanding inventory management & Cost of Goods
- Excellent interpersonal, verbal and written skills
- Highly organized, motivated and detail oriented
- Computer skills including Windows applications and some proficiency with Excel / F&B ordering system / F&B inventory system
- Work well under pressure
- High School diploma required
- Physical requirements include the ability to endure long periods of standing, sitting, bending, and lifting ( up to 50 pounds may be required)
